Steel, Brass and Glass seem to be the popular choices. Steel usually provides a thin, "stinging" sound. Brass is a bit rounder in tone while still providing enough "sting" and Glass is rich and clear in tone.
Personally, I prefer Steel or Brass for acoustic guitar and Glass or Brass for electric guitar.
